Gluten Free - Protein Waffles
These delicious waffles are gluten-free and have no added sugar! They are a great source of energy and protein to start your day with. I made mine as mini waffles, so that they are perfect for on the go or filling snacks for later. I did make the numbers for the full size waffles as well.
Remember that you can make your macro amounts different by using different products. I added up all the macros from each product separately, then added them all together from how much was in my batter. Then I divided those numbers by how many waffles that the batter made. That is how I got my numbers. If you want to make yours low fat, I would suggest swapping the coconut oil for unsweetened applesauce or using a bit of extra Greek yogurt instead. I will give a chart of the total values in the batter, then how much in each mini waffle, and how much in each regular waffle.

Just a quick comparison, this is a regular waffle made with Bisquick mix. One waffle has 288 calories, 14g of fat, 32g of carbs, 7g of protein, and 5.4 g of sugar.
The Ingredients (what I used in parentheses)
1 Cup or Gluten Free Flour ( King Arthur Brand)
1 Scoop of Whey Protein (Optimum Nutrition - Gold Standard 100% Whey brand)
2 teaspoons of baking powder
¾ cup of vanilla Greek yogurt ( HEB Greek Vanilla )
1 Cup of Almond milk (Silk unsweetened vanilla)
2 eggs
2 tablespoons of organic coconut oil (HEB organics)
Instructions
Mix the dry ingredients first. The gluten-free flour, whey protein, and baking powder.
Add in the wet ingredients next, the yogurt, almond milk, eggs, and coconut oil. Mix well until you have a good batter consistency.
With your mini or regular waffle griddle, put a light amount of vegan or regular butter so it doesn’t stick. Add your batter and let your griddle do the work.
These can be eaten without any honey or syrup. If you feel like you need the sweet, I would recommend some fresh berries chopped small and added on top.
If you want to lower the sugar content, you can also choose a sugar free Greek yogurt. Dannon Oikos Triple Zero Vanilla Greek Yogurt is a great substitution.
